Avocado Banana Ice Cream (for two)


Halleluiah, hot summer days have finally come to England!  And so have the days when ice cream is popular, so here is a recipe for a slightly out of the ordinary flavour.  I tried this out because I didn’t really feel like eating an avocado I had and I needed to use it or lose.  I say the recipe is for two, but as I was on my own on this occasion, I have to admit that it was extremely hard not to eat both servings in one sitting!
 
Ingredients
 
1 large very ripe avocado
1 very ripe banana (or previously frozen)
1 tsp vanilla extract (mine is homemade*)
1/2 cup crème fraîche (homemade with raw milk)
2 generous tblsp honey (raw)
 
Method
 
Put everything in a big bowl and mash it about with a big fork.  I then used a hand beater to finish the job of making it smooth, but I’m sure there are other ways to do this which I leave up to the individual.
 
Spoon into glass dishes or other container(s) of choice and place in the fridge.  Ready to eat in a couple of hours.  If really hard, leave out for five minutes before serving.

*Vanilla extract is very easy to make.  Just put a couple of vanilla pods in a jar and cover with high proof Vodka.  Let sit for a couple of months in the cupboard and it’s then ready to use.
